Tengen Toppa Gurren Lagann, every time kamina gives one of his speeches I feel inspired to rise up and steal my own giant fighting robot.
I think a good chunk of anime is inspirational in its own way.
Space Brothers - At 10-13ish two brothers love space, the moon, ect, and promise each other that they will become astronauts. By the time one is 30 and the other is 28, the younger is an astronaut and the other, is just getting fired from another job. Depressed, he suddenly gets a chance to follow his dream after all. This show made me want to be an astronaut. Im too old (I think?) and out of shape for that, but, it was extremely inspiring.
Yakitate!! Japan - an idiot with a passion for cooking, beats the odds and makes the greatest bread in Japan.
Eyeshield 21 - In which the main character was always made fun of and picked on, and made into a gopher. But being made a gopher turned him into him having fast legs, that made him into a star player on a football player.
I like the idea in anime's that you can be a nobody and suddenly be thrust into an exciting life, and it makes you feel like you should never give up.
Sailor Moon also makes me believe in myself. Darn it, Bunhead!!

Goku would be thoroughly beaten and more dead than alive at the end. Then the following week, he gets his second wind coming close to winning the battle. Then the next week the tide turns. The following week, Goku gets the upper hand again.
There is a reason I no longer follow Dragonball, even the new series.
