BECK is a fantastic anime about music, and really the best you're going to find. Granted, the manga is much, much better. The anime only covers volumes 1-12 of the manga, which is 34 volumes.
K-ON! was hardly about music at all. They ditched the music shtick after 3 episodes to focus on the fact that it's 4 lead characters were ridiculously moe. I mean...there was only 2 episodes actually dedicated to the music, and there was no progression, no evolving of the music, they didn't show how the music was written, how they became better musicians, or anything...it was not a show about music, it was a show that simply had some music in it.

How 'bout Nodame Cantabile and La Corda D'Oro (Did I spell it correctly?)
I haven't watched them though but I did hear about them.
Nodame Cantabile is an anime that deals with classical music, romance and such. While La Corda D'Oro is a little the same but this was based from a game.
