I feel like its split apart
Ages 5-10: you got stuff like pokemon, digimon adventures, yokai watch
Then you got your "kid friendly" shonen stuff thats usually aired in early morning timeslots
Ages 7-14: stuff like One Piece, Dragon Ball Super, Yugioh, Toriko
Then you got your "edgier" shonen which can be a lot more violent and have animes aired in primetime afternoon slots and have more violence and explicit themes
Ages 12-18: you got Death Note, Attack on Titan, Naruto Shippuden, Bleach, Claymore, Fullmetal Alchemist, etc anime sound
Then you move into seinen territory, which is also split into sort of sub categories. Because there are clearly certain seinen franchises that are still aimed at high schoolers.
So like Seinen aimed at teens 14-21 usually revolve around a harem taking place in high school or something.
Then you got seinen aimed at a general mature audience like Ajin.
Aged 15-30 seinen is like Ajin, Parasyte, etc
But then you got seinen thats clearly aimed strictly at adults and not teens like Berserk and Ghost in the Shell which is pretty much 17/18+
And believe it or not theres seinen magazines strictly marketed at middle aged buisness men, so im assuming thats like 40+ the oldest demograhic for manga.
