The saddest ending for an anime I ever seen has to be Rurouni Kenshin. Not the ending of the series but the ending of the movie Samurai X:Reflections which Im sure is the last of Rurouni Kenshin.

Chrno Crusade, without one doubt. That was the only anime that has ever got me close to showing tears. Almost, but did not. I am a man you see.
Azumanga Daioh was also really upsetting for me. When Chiyo-chan started crying that was my limit. That was really sad for me. I am quite a soft person really.

Hanbun no Tsuki ga Noboru Sora is the saddest series I can think of at the moment.
Grave of the Fireflies is obviously the saddest film I can think of.

I didn't tear after watching Grave of Fireflies.....I cried when watching Gedo Senki. I don't know why. I think it's because the song touched me.

Final Fantasy: Crisis Core. I know this is a game for the PSP but the cinematic ending of it was very sad and it sucked at the same time. It sucked because Cloud lost a good friend and mentor, Zack. It was sad because Zack wasn't able to Aeris again, and it had been years since he last saw her.

I realised playing through the whole game that he was going to die, but i dunno, i guess he was just a cool character. and then the flash backs of Aeris (Aerith) saying she sent like 80 letters to him over 4 years...and Tseng saying to "find Zack" coz he has Aeris (Aerith's) last letter *cries* lol the events happening,and even leading up to that was really well done,except it left a whole heap of questions unanswered....but whatever,it was awesome

anyways, as for sad anime's, i'd prolly say something like Grave of the Fireflies....Cowboy Bebop and Elfen Lied (that's all i can think of at the moment )
We umm unlike others tears doesn't mean sad for me. For example I've cried in . .. . Chrono Crusade, Eva, Fafner, RahXephon, Azumanga Diaoh [laughing too hard at the shoe kick], My-Hime and the list goes on.
For the saddest I'll say Gilgamesh. Didn't cry but was gutted on the last scene of the series. Shucks.
Rumbling Hearts =[ I loved that anime and the ending was just so sad =[ I started crying.
Also Fruits Basket. A Happy Ending but a episode BEFORE that was really sad
(Personally I have not seen ALOT of endings cept for anime like FMA, InuYasha, Trinity Blood)

Grave of the Fireflies left me sad for days.
And I'm sad now thinking about it.
If this counts, the last few episodes of Sailor Moon (Stars) made me cry harder than any show/anime/book/movie has ever made me cry before.
