i voted for elfen lied, couse it was my gateway anime, so isspecial you know hehe, but others of the animes that are high on my list and i dont mind watchin over again are Kimi Ga Nozomu Eien, Cowboy Bebop and Beserk

Fullmetal Alchemist is simply the best... :P Both anime and manga are very good... It has everything...XD But I would say Berserk if the anime would be as good as the manga...

I went for Full Moon, but I wouldn't call it one of my favourite animes, but it did have it's moments, the ending was really good though. My faves right now would be Kyo Kara Maoh, Ouran High School Host Club, and Fruits Basket
