So who are your favorite spies, secret agents, and the like in anime? And Please try to find something other than Spy Family. Why do you like them? What is your favorite weapon or gadget?

Anime is a lot like sex. Done right it's a beautiful act of creation that brings a little more light into the world. If it's sick and wrong... it's even better.

I remember some time ago watching the movie Read or Die. I never watched the series. I did like the movie, but I don't remember much of the details. I would like to re-watch it sometime.
I just started Madlax. I am through eight episodes, and I am hooked.
Jackie Coogan, Charlie Chaplin, and Charles Reisner as the Bully.
Reisner was a former pro boxer who turned actor, writer, and director. He previously worked for Chaplin behind the camera on The Gold Rush. Reisner would later become known as a comedy director working with The Marx Brothers, Jack Benny, and Abbot and Costello, among others.
As I recall, the main character from Master Keaton worked for the British government for a while, much of it with the SAS. Though this portion of his life does not prominently figure in the series.

Even if they infiltrate someplace like by pretending to be cops? Technically it's not just spies. Sabotage, infiltration... come on surely you can think of somebody.

^ Are they working for some government? Or are they just crooks working for themselves?

Actually the government works for them.
And there's also Corporate Espionage and independant agencies like MIB... or the Reapers
Code Geas...
