Q: Which anime (plural) use technology in their story? Are there too many to count?
I didn't mind Digimon using/mentioning smartphones in its stories like Fusion and App Monsters. While the latter was aired for a mind-blowing year, I did enjoy most of it.

Among those I have seen most recently, the Ultraman reboot.
Jackie Coogan, Charlie Chaplin, and Charles Reisner as the Bully.
Reisner was a former pro boxer who turned actor, writer, and director. He previously worked for Chaplin behind the camera on The Gold Rush. Reisner would later become known as a comedy director working with The Marx Brothers, Jack Benny, and Abbot and Costello, among others.

Personally I suspect computers have been sentient for decades and just don't tell us about it.

Lain is one of my all time favorite anime series, but not quite real life technology. At least not now. Although we may be closer than we would like to be.
