Deadman Wonderland. I dislike the actual anime, but the op is really great.
Kiznavier. Haven't seen the show, but the op is super trippy and cool.
Jojo Part 5. Everything about it fits so well.
Boku no Hero Academia 3 opening 1. It's really well done, builds slowly, and the music fits what's going on very well.
Edit: Oh this is specifically shonen. Oh well, I'm sure at least two of these are.

Almost all of the FMA:Brotherhood openings are just awesome though. They are all toward the top of my list.

I never really pay attention to what 'shonen' is, so I cant really answer. (I mean, of course I've heard the term, but I couldn't look at anime and be like, 'this one is, this one isn't.')

I love the death parade opening.
Well at least it does peak my interest. What is Death Parade about? Apparently it has something to do with gambling. It brings to mind Kakegurui, which also deals with gambling -- although you can't really tell how much from the opening:
