Hello and welcome to the forum! I must say that I haven't seen any of the anime that you've mentioned, though I was planning on starting Higurashi once I finish with Fruits Basket, many people say that it's excellent. Soul Eater seems interesting too. My favourite anime by far have been Code Geass and Full Metal Alchemist: Brotherhood, have you seen any of them? If not, you must check them! Loll it seems that all I do is advertise these anime hahaha.

-ahem.- That said, welcome to the forum. A slow response is better than no response, especially when you've been busy with work ^_^;

And as if it's not already obvious ... Soul Eater, imo, is win. Only watched the anime though, not seen the manga. Totally would watch it again just to kill time =D
