Um... how about "I want... [insert wanted thing here, food for example.]" and "I need.. [insert needed thing here, money for example.]"

The Japanese word for "to want" is 欲（ほ）しい, but since it's an adjective in Japanese, you must use the particle が with it. (Or you can choose to omit the particle in casual situations.)

お金（かね）が欲（ほ）しい。 = I want money.
彼氏（かれし）が欲（ほ）しい。 = I want a boyfriend.
誕生日（たんじょうび）に何（なに）が欲（ほ）しい？ = What do you want for your birthday?


However, when you say something like "I want a hamburger", you really mean "I want to eat a hamburger", so that's that kind of thing you need to keep in mind. When you want to do a specific action upon something/someone specific, you need to use the ～たい form of a verb. In this case, both を or が can be used as the particle, although を is becoming more wide spread while が is phasing out, so sticking with を is better.

ハンバーガーを食（た）べたい。 = I want [to eat] a hamburger.
コーラが飲（の）みたい。 = I want [to drink] coke.


As for "to need", the generic word is いる (sometimes written in kanji 要る), or 必要（ひつよう）. いる is a verb, but 必要 is a noun.

私（わたし）、お金（かね）がいる。 = I need money.
私（わたし）には、あなたが必要（ひつよう）だ。 = I need you.
(* literally, "You are a necessity to me.")


But once again, context is important. When you say "I need water", you mean "I need to drink water", so that's pretty much "I want to drink water", and therefore would need the verb 飲（の）みたい. To express need is quite complex in Japanese, as it varies with the situation, so using the generic words will sound very unnatural in may scenarios.
