I consider anything made before 1990 old school. To me, anything before 2000 is retro (with the return of Sailor Moon and Dragon Ball), but not old school to.
My favorite old school anime is Zeta Gundam from 1987.
And classic anime, I love Ashita no Joe from 1970.

I've been watching anime long enough that I don't consider anything "old school" if it was made prior to 1990. But I suppose that will have to change.
So let's see...cutting out series I just "like", there's are series I consider absolutely essential watching from pre-1990:

Of these, my favorite is Mobile Suit Gundam.
Post-1990 gets more difficult.

Okay, honestly there's a lot from the 90s, the later half of the decade through 2002/2003 produced some of the greatest anime ever made. So we'll cut to the chase and say Cowboy Bebop from the 1990-2000 period.
