I have watched Elfen Lied but that was way too long ago so I barely remember anything so cant really say that one. I'd probably say Hellsing Ultimate is the bloodiest anime i've ever seen ^^

I've seen quite a few bloody anime, but lately I've come to think that Neon Genesis Evangelion, especially the ravaging of Unit 02 in The End of Evangelion, may be the bloodiest in sheer volume of blood spilled (though it's not technically human blood). I've watched the movie a couple times, and it still remains the only scene in anime that can make me feel a little nauseated when I watch it.
In terms of visual depictions of graphic violence, I say Shigurui.
Gantz, Berserk, Afro Samurai, and Hellsing Ultimate.
Elfen Lied, Gantz, Hellsing Ultimate are probably the bloodiest I've seen, or at least I can remember.
Hellsing Ultimate, Elfen Lied, and Higurashi no Naku Koro ni.
Watch Blood C for hilarious gore fest. xDD
how could i forget about black lagoon. a lot of cursing,blood and guns lots and lots of guns ha ha

For me it has to be the Samurai X OVA Trust & Betrayal I mean my god when Kenshin killed someone it was a bloodbath
Another and Higurashi. But it's no doubt that Elfen Lied is the most bloodiest anime I've ever known, though I haven't watched it. Also, School Days.
I haven't seen most of the animes listed (gives me some hints on which ones to watch!) but one I have seen is Elfen Lied and its the bloodiest I think I've seen so far.
