I have a few I really like. At the moment though, my favorite soundtrack is from Pirates 3.
talladega nights: the ballad of ricky bobby. i was tapping my feet the whole duration of that movie!

Definately Resident Evil :Apocalypse , Songs from bands like Slipknot , Cradle of filth , H.I.M , Rob Zombie , Killswitch engage and many other great bands , made the movie more interesting and i couldnt move from my seat....great soundtrack.
Also Transformers 2 : Revenge of the fallen. Songs like "New divide" by linkin park , Avenged sevenfold's "Almost easy" , it was just a perfect package of what makes a awesome movie...=D

Also adding to the list ,Silent hill the movie , i cant forget the songs by Akira Yamaoka , she is a genius. Awesome movie with great soundtrack.

It's a toss up for me between the Matrix and Slumdog Millionaire soundtracks.
I guess I do prefer the soundtrack before of the first Transformer

Requiem for a Dream (remixed sountrack, too!) and Lost in Translation have beautiful soundtracks. I have to say I'm a sucker for the HP and Lord of the Rings soundtracks.
But my favorite movie soundtrack is Ever After.

I'd rather choose For You by The calling. It was the soundtrack in the movie Dare devil if I'm not wrong. It was absolutely perfect! slumdog millionare soundtrack is good too.

In terms of instrumental music:
Lord of the Rings is one of the best for sure! ^.^ All 3 OSTs have interesting songs that aren't totally repetitive like most tracks on OSTs. The musicians and singers are incredibly talented; the sound of the instruments and vocals/choir is amazing, especially the way that it all blends together to create the perfect mood.
Angels and Demons: the movie wasn't very good, but the OST has a unique sound to it by using fast-paced choir bits and violin solos. (However, I just bought this OST recently, so I might just really like it at the moment because it's new).
Master and Commander: this is more for people who prefer strings and drums music, because there isn't any choir work or brass. However, the OST is still great because it doesn't fall into that trap of repetition in its tracks.
OSTs mostly consisting of various artists' music that was brought to the movie:
Digimon the Movie: I am NOT kidding here. When you get past the silly (but classic!) Digimon music, there are bands like The Barenaked Ladies, Smash Mouth, Fatboy Slim, The Mighty Mighty Bosstones, and more. I bought this when I was 7 years old, and my parents wanted to listen to it! XD
Watchmen has some really good songs, despite the fact that some of them come from the 80s (not that I think the 80s was totally full of bad music, it's just that a lot of other people do). Even though I rather disliked the movie (but enjoy the comic book), I think the music helped make the movie feel somewhat nostalgic.
Shrek has good artists in its OSTs, but I think Shrek the Third's OST wasn't as good as the other 2 movies' OSTs.
I've excluded anime OSTs from this list because I'd probably have a list of all of Yoko Kanno's OSTs to put up. ^.^;
You can close your eyes to reality but not the memories... We erase it from our memories, but the imprint is always there...

Probably Jurassic Park, but almost any John Williams score is top shelf stuff. There are people who care little for Star Wars, even those who scoff at it, but they can all recognize even "The Forest Battle" when played.
Typically, I prefer symphonic scores to any popularized contemporary music for soundtracks, but that may be more a result of what movies I enjoy. I'm not really sure.
In any case, Williams can explain the plot nearly in its entirety with the music, and it really impresses me. It doesn't sound half bad, either!

This soundtrack is so amazing. Brian Eno is great and "Season Song" by Blue States is one of my favorites on the soundtrack.
At this moment, I would say that my favorite soundtrack is from Garden State
"Don't Panic" by Coldplay, "Let Go" by Frou Frou and "New Slang" by The Shins are my favorite tracks, but the album in it's entirety is great.
