Mustang is cool enough... Though i find he's a bit of a one trick pony. Like Riza says, he's useless on a rainy day. Riza Hawkeye. Now THERE'S good character. but she's not an alchemist.
So my favorite alchemist are probably Izumi Curtis and Scar. And Wrath, in the first series, if he counts.
