What are some must watch anime?

What are anime that are so good, every anime fan should watch it at least once, even if it:s just to say you did? I probably haven:t watched enough anime over the years to know as many must watch, but Flcl, cowboy bebop, and neon genesis evangelion seem like the only three I can think of...
