Rainbow Six Vegas 2 and Army of Two are my current favorites. Halo 3 has a decent co-op mode as well.
I am looking forward to Mercenaries 2 and it's online co-op, being able to go anywhere on your own while still helping each other will be nice.

My friend and I had so much fun completing Gears of War in online two player co-op on insane difficulty. Also Halo 3 online co-op was also really fun.

Honorable mention: Halo 3. Co-op is awsome, but there's no easy way to use it. You can't search for and join random campaigns, you have to play with a "friend" and for some of us that's difficult to come by.

I got to try Mercenaries 2 o.o, I just loved blowing up building's mindlessly ^^.

I would Steal a Helicopter, then fly on top of a big building... Call in Bunker Buster ( note I am broke after this ) and Go down with the Building ^^

Rainbow Six is Definitely one of the best games out there. I like the Offline play of Halo, not that thrilled ever about online, to many children.
