Rurouni Kenshin. Definately. o_o;; Actually, you should first see Samurai X - Trust & Betrayal. Go watch all the episodes of Rurouni Kenshin. Then Watch Samura-X Reflections. Such a sad series.. ;__;

In my opinion... Dragonball! Maybe not the whole series (it takes a while) but it's definatly worth the watch for any anime fan. Also I think popular ones such as Inu Yasha and Naruto would be a good choice seeing as a lot of people enjoy watching them and it's a way people can start talking to each other etc.

If you want a sci-fi with close related to actual facts, salaryman-mentality with question about hope and dreams also struggle between love and life drama, you must, at least have go with Planetes (Fact: sound doesn't travel in vacuum space)

I think that Suzumiya Haruhi no Yuutsu is getting in the list of "Must See Anime". Mainly because of its popularity. I just think that anime fans should simply watch it to see what their own views on it are as it is well-known and talked about loads.
Lucky Star is another. Their are so many references from other anime and games in that anime for people to enjoy. I think that anime is suited for any hardcore Otaku.

I usually have a long list, but most people have already mentioned the titles.
Whether or not someone has mentioned, everyone has to see Tengen Toppa Gurren Lagann. I keep mentioning this show, but that's because it's the most brilliant anime I've seen in a long time. It can appeal to all ages, all types of fans, and all genders. It's an all-around incredible show with superb art. The comedy is truly comedic, and the characters feel real and new. This show is a must-see for anyone who calls themselves an anime fan.

No one's mentioned Princess Mononoke yet. Excellent film and in my opinion the underrated gem of studio Gibli. Others would have to be FLCL already mentioned by several people, Black Lagoon, Trigun, Full Metal Panic and the highly underrated Rune Soldier.
Well, thank you naotavespaboy for mentioning Black Lagoon. One of those mature theme anime that I really love to watch. It depicts exploits of a moltey crew of modern ('90s) day pirates/smuggler set in the South China Sea. In this anime, everyone is not the right-side of the law and you got all kind of criminals/bandits in store; let it be the Russian Mob, terrorist, corrupted cops, EGL assassin or cross-dressing psychopathic killer twins. If you like gun-blazing action, bad-mouth strong woman and more profanity you must watch this.
Welcome to the N.H.K. it also a must if you want mature dark comedy and otaku-driven satire

Well it seems that a lot of people here are mentioning anime that they like. But one anime that everyone should see is Otaku no Video.
This anime, before Genkishen is both a parody and tribute to anime fans. It allows you to look at yourself and see our fandom for what it is. And to both love and hate that truth.
