Give The Black Mages a try. They're Japanese, they're metal, and really awesome to listen to; especially if you like Final Fantasy tunes, 'cause that's all they play... and they're pretty damn good at it.

Dir en grey, D'espairs Ray, Unsraw, Girugamesh, -OZ-, Mucc (kinda metal), there are SOOO many... these are the faves though =]

Onmyouza is an amazing band. They sort of sound like Iron Maiden and Priest. I love how melodic their sound is, like old skool American and Euro rock.
Oh ya i forgot to recomend you should listen BLOOD STAIN CHILD...I really cant think of any! >.>

Try Due'le Quartz, they're probably my favorite Japanese metal band, besides The Black Mages. The song "Rodeo" is really awesome.
Well Dir en Grey was considered rock but the recent stuff that they're producing is putting them under the genre of metal.

Dir en grey isn't and never was metal.
X-Japan- Progressive/Speed Metal. Highly recommended for those trying to make a transition between VK to metal.
Sex Machineguns- Progressive/Power Metal
Concerto Moon- Neo-Classical/Power Metal
Galneryus- Power Metal
Touko- Folk Metal (If you find any significant amounts of it, tell me)
Misogi- Blackened Folk Metal (see previous parenthetic message)
The Black Mages- (mostly) instrumental Progressive Metal
D'espairsRay- Industrial Metal
Boris- Experimental/Drone/Sludge/Stoner/Doom Metal, Noise Rock. Highly recommended.
Just for the hell of it, I'll throw in some Japanese hardcore, electronica, and so on.
Envy- Post-rock/Screamo. Highly recommended. This isn't any of that crappy emo you hear on the radio. Keep an open mind, and give them a listen.
Mono- Post-rock. Heavy, with an ambient, experimental touch. This is instrumental.
Jun Chiki Chikuma- Electronica. I suggest getting the Bomberman Hero Original Soundtrack from www.gh.ffshrine.org.
Nobuo Uematsu- Symphonic/Electronic/various others. C'mon. He made the Final Fantasy soundtracks. I suggest the Final Fantasy IX OST above all others.
Melt Banana- Noise Rock. Not for virgin ears. This stuff is hellaciously noisy and abrasive.

Anyhoo try Shadow. Melodeath from Japan.
And my favourite band from Japan would be Gallhammer. It's an all female band that play a blend of black/doom with vocals that are similar to the suicidal black metal of Shining.

Vomit Remnants. New York-styled brutal death metal. They don't have a very expansive discography, and I think they may have broken up.
I'm going to have to look up some of these bands sometime.
Sigh is also imperative. Avant-garde black metal wackiness.

Malice Mizer's pretty good. Most of their stuff is heavily laced with Gothic stuff, and Romanticism. I wouldn't call them metal though. Just semi-related.
Onymouza is the only Japanese metal band that I actually bought an album, so I'm going to recommend it on principle. Though I'm afraid it might not be "metal" enough for some metal heads.
Thee Michelle Gun Elephant is a pretty original hard rock band though it might not classify as metal exactly.
