How come you can't dissolve powdered milk in cold water?? all the milk just end up in lumps!! i think its one of the great unsolved mysteries of the world. can somebody enlighten me??

It's the temperature of course,milk can never be dissolved properly in cold water since the temp. is not enough to break the milk and blend it with the solvent.

Fat probably is the culprit. Put butter in cold water, and it will be solid. Put butter in warm water, and it will melt.
But it won't mix, so you need an emulsifier. Put some egg yolk in the mix, and it will no longer be layered. When you cool it down, it shouldn't become solid. You could also try using milk, since it already contains water and fat, it should also contain an emulsifier.
When you've got your blended fat and water, cool it down, et voila!, it (shouldn't be) isn't lumpy.

uhm..this is just basic chemistry.or was it physics? (im not trying to look smart here.^^') u see, u have to look at the water as a huge collection of water molecules.H2O rite? then u have to remember that when its cold molecules tend to stick together.the opposite happens when its hot.kinda like people.^^' if they stick together then u only have little spaces between each water molecule.
now u think about the milk molecules. (theoretically of course.i think the molecules in powdered milk arent called milk molecules.its probably sum scientific sounding thing.^^') u want to mix it wid the water rite?to do that it has to fit inside the spaces between the water molecules.since its cold and there's less spaces between the water molecules, only a little bit of the milk will get to mix wid the water and hence u get the lumps u talk about.^^
if u want to mix the milk completely u have to heat the water first.if u want it cold then just pop it into the fridge after u heated it but not while its still reali hot otherwise ud ruin ur fridge.hehe.hope that helps.^^

It's all about thermodynamics and solubility rules. A reaction is either spontaneous or non-spontaneous. Ice melting is a spontaneous reaction because you don't really need to do anything to it, just leave it at room temperature or whatever.
The powdered milk dissolving in cold water is a non-spontaneous reaction. What this means is, the system lacks the energy required for the reaction to proceed and so energy must be put into the system. That's why the water has to be warm.
The reason why energy is needed is where the solubility rules come into play, but we won't go into that because it means I have to explain functional groups and ions and whatever and I just can't be bothered right now lol. But hey if you want to waste heaps of time in a science class, ask the teacher to explain it to you =3
