well i havent seen many so i can only give you my top three is okay???
....let's see:
Gundam seed
G Gundam(i like how they could control the gundam with their body movements!!!)
Gundam wing (i don't remember mush of this show but it was good!)

1. Zeta Gundam (Just saw it for the first time recently and instantly loved it.)
2. 08th MS Team (It's more realistic.)
3. G Gundam (It's quirky and funny)
4. Mobile Suit Gundam (Amuro vs Char is classic)
5. Gundam Wing

I personally recommend that you choose them by personal preference:

If you want to get into Gundam as whole, know how it is and see its true state of art as anime, watch the Universal Century series, focussing on the rivalry of Amuro and Char.

-Mobile Suit Gundam 0079 (the first)
-MS Igloo (The Hidden One Year War, Apocalypse 0079)
-Gundam 0080: War in the Pocket
-Z Gundam (series or movie)
-ZZ Gundam
-Mobile Suit Gundam: Char's Counterattack

If you are only appealed to cosmetic issues and visual appearance as well as power over plot, sense and logic, and don't mind being skin-deep, whatch Gundam W and SEED, they have Gundams with Angel Wings and Scythes and are made on a later date (watching 0079 will probably be awkward as its 1980s graphics), however I personally despise SEED and W (G is okay as it doesn't try to go deep instead of trying and failing):

-Mobile Fighter G Gundam (its like Dragonball with Gundams)
-Gundam W
-Gundam W: Endless Waltz
-Gundam SEED
-Gundam SEED: Destiny

Really to me iam very like GSD Final Plus, but for first time to you must watch from Gundam Seed to understand with Gundam Seed Destiny, but in gundam seed iam very hate with the girl who name flay alister so i write Gundam Seed IN number 3
Gundam Wing IS not bad to cause it good fight
