No it's not childish, there are just alot of humerous thigs going on in it. This anime had very sad situations also such as the death of a character you grow fond of while watching it.
No! I don't think it's very childish, because there is a bit of blood and guts in some parts, and if you've read the manga, it gets kinda complicated along the way.
Although, I think that Ed is quite childish sometimes, though.(:
