Well, I've been memorising hiragana lately and I noticed that the writing of さ (sa) and き (ki) is sometimes different...

I saw some writings of さ like this...


And some like this...



And about き, the same thing. Some like this...



And others like this...



I'm just confused whether I should joined the curved line or not. Can anyone please help me ?

Join the lines since you just started learning kana, you should stick to the "join the curve" one, since this way it is more clear.
There're a lot of other cases in kana.
Sometimes it's cos it's computer style, sometime it's fast-writing style, etc.

The non-connected form is the handwritten form, while the connected form is the print form. It's similar to how letters like "A" "G" in English can look different in lower case depending on whether it's handwritten or in print.

the one with curve is the old writing style, that's what my sensei said, if she didn't mistaken
anyway, people nowadays can write either with or without the curve
I personally choose the old writing style, but once again, it's all up to you
