I believe that most (if not all) character reactions in anime are actually based on (if not derive from real life); however, that's not to say that every reaction has to be necessarily an exact match of its real life counterpart, and if that were the case then anime might as well be live action. The great thing about anime is its ability to outwardly express inner qualities and implied meaning in characters as opposed to other forms of animation. For example, when an anime character gets angry the head may be enlarged and/or the eyes may light up. We all know that those characteristics would be impossible irl - but those reaction's are still nonetheless true to that character's psycology; they're just being outwardly expressed so that the audience can better connect with that character's true feelings, and the extent to which they are being affected.
I can't explain the bloody nose thing though! XD I guess that's one exception where that demotivator you quoted answers that question better.
