I don't know, I think the chance that the gate will take something of extreme vital importance is unlikely, considering that the Elrics sensei lost how many of her organs and survived - albeit sickened, but still functional and able to perform alchemy. I mean it seems the only things which are life-and-death losses would be a brain or a heart, but again, considering the other options for the gate to take... I would take my chances.

I think I would risk it to have that kind of knowledge and not have to use a transformation circle.

No amount of infinite knowledge is worth loosing one or two limbs, an organ or even someone close to me.
I don't think I'd even think about doing it, the risk just wouldn't be worth the reward.
