the problem is that your question "who's to say.." is one of philosophy, not science.

science draws conclusions based on confirmed evidence available; if society made decisions based on unknowns, then it's really no better than religion at that point.

More accurately, science looks into the unknown, makes theories about the unknown, and then conducts experiments to either validate or reject the theories. Yes, science deals with the unknown/unresearched, but scientific results can never be based on the unknown.

You should ask them how in the world we can ask an unborn human being how s/he wishes to be born. I think the Catholics are just generally against any biological innovations/technologies.

So by the same logic, when they baptize babies, they're denying the baptized a chance to choose their own religion or something.

I'm pretty sure you don't understand the argument being made by the Catholics. It's never been about what people want, but what the clergymen think God wants. I don't really get your analogy either.
