Mine would be gainax by far. They take anime to a new level, look at evangelion or gunbuster, these guys show anime isn't for kids, intelligent beyond imagination and something new pops up everytime you re-watch one of their shows. Gainax FTW:p

American: Funimation - they saved One Piece, Geneon, and ADV. Do I really need to explain further?
Japanese: Bones, they produce some of my favorite series
uuuugh, are we talking about publishers such as ADV? Or the actual company's that make the Anime like Square-Enix?
I buy my Anime's from Asia, therefore they have not been tampered with at all. The subtitles still have all the swearing, nothing has been cut, they are sponsered by Animax or something still, and no english dubs. The versions I get are the ones that were around before Geneon and Funimation got there hands on them. (I cannot believe all the rude lines they took out of Lucky Star even in the American versioned subtitles. -_-)
But I would have to say Clamp and then Geneon for publishing. Geneon is cool because of Azumanga Daioh and Gun X Sword. Clamp because of "X" and Code Geass.
CLAMP is not a publishing company. They are a group of female manga-ka.
I love Shueisha when it comes to manga, and Pierrot when it comes to anime. They come out with some good stuff.

Gonzo or Bones. Both have produced some fantastic Anime and you always expect something of quality off them.
Um, do Shonen Jump count? if so then SHONEN JUMP! They do Dragonball, Naruto and Bleach. Three of my favorites. Tokyopop is awesome too :] I went to one of their events the other week, it was cool :)

They produced Suzumiya Haruhi no Yuutsu, Full Metal Panic (Fumoffu and TSR though), Air, etc.
Don't tell me you don't like those, haha.
Geneon is the best because they make Tenjho Tenge and SHONEN JUMP is my favorite because they made Naruto and Bleach but I dont really care for DBZ

Suzumiya no Yuutsu and Lucky Star. Two of the greatest anime programmes ever produced.
FUNimation are okay because they often employ some actually decent dubbed voice-actors.
For the U.K it is "MANGA Entertainment".
Gonzo (Made Afro samurai,Ninja Scroll,Basilisk,etc) and MADHOUSE(Gantz, higurasi no naku koro ni,claymore)....sunrise(cowbow bebop) is ok too,same about aniplex (read or die,etc):)
